GLADYS' BIRTHDAY QUICHE Print

2 deep-dish pastry shells, unbaked
1 lb. bacon, chopped
1 large onion, chopped
1 1/2 heads of broccoli
1 1/2 lb. sharp cheddar cheese, grated
1 dozen eggs
2 cups half & half
salt & pepper to taste

Preheat oven to 350 degrees. Saute the onions and bacon until the onions are golden. Cut the florets from the broccoli and boil or steam lightly and drain. Arrange the broccoli in the pastry shells, add the onions, bacon and cheese.

In a large bowl, combine the eggs and half & half and salt and pepper to taste (the cheese and bacon are quite salty, so you don't need much more additional salt). Mix well and pour into pastry shells over the other ingredients.

Place onto large cookie sheet and bake for 1 hour. Let cool until firm before serving.

This quiche is great to make ahead and freeze, reheat in oven or by the slice in the microwave.
