1 6oz pkg Lemon gelatin
3 3/4 cup water
6 bananas
2 cups mini marshmallows
1 can (1 lb 4 oz) crushed pineapple undrained
1 cup whipping cream
1 cup shredded cheddar cheese
3 TBS corn starch
1/2 cup sugar

Dissolve gelatin in two cups boiling water. Stir in 1 3/4 cups ice-cold water for quick set. Chill until Slightly thickened. Fold in peeled and sliced banana and marshmallows. Turn into spring form pan and chill until firm.

Meanwhile back at the ranch: mix sugar and cornstarch and blend with undrained pineapple. Cook, stirring until mixture boils and thickens. Cool. Fold in Whipped cream and 1/2 cup of the cheese. Spread on top of jello mixture and sprinkle with remaining cheese. Chill several hours or overnight.

Note: when you have forgotten to fold in cheese scrape cream off in front of guests and fold it in and replace cream.
